Parsnip root: a Polish broth essential, rare abroad

Parsnip root is an inseparable ingredient of Polish broth — it goes into the pot with carrot, celery and leek. Yet in many other countries the white parsnip root is practically unknown in the kitchen and can baffle foreigners. It is available year-round in Polish greengrocers, but can be hard to find abroad.
