To pasteurise pickled cucumbers or not? Here's the answer
Pasteurising pickled cucumbers kills the lactic-acid bacteria responsible for fermentation, stripping the product of its probiotic benefits and distinctive flavour. Properly fermented cucumbers stored in a cool, dark place — such as a cellar or fridge — do not need pasteurising. Pasteurisation is only recommended when cold storage is not available.
