Scientists from Lublin patent method for detecting pork liver in food

A team from the Bioanalytics Department of the Medical University of Lublin, working with the University of Life Sciences in Poznań, patented a set of peptide markers allowing identification of pork liver proteins in meat products. The invention is intended to help fight food falsification. Earlier patents from this team concerned detection of rabbit meat and liver.
