Day-old pasta: safe and better for blood glucose levels
Reheated pasta is safe if leftovers were refrigerated quickly after cooking and stored properly. Moreover, cooled and then reheated pasta may have a better effect on blood glucose levels after a meal than freshly cooked pasta — due to changes in starch structure.
