Bacteria in artisan cheeses may boost gut health
Scientists studying three artisan British cheeses found that the microbes giving them their distinctive flavours may also benefit the gut. As the cheeses aged, beneficial bacteria reshaped their aromas and textures while potentially generating compounds linked to reduced inflammation, lower cholesterol and appetite regulation. The findings suggest traditional artisan cheeses could have health benefits beyond their taste.
