Potato reshaped Andean DNA — evolution driven by diet

Indigenous Peruvians carry exceptionally high copies of a starch-digestion gene, likely because people with more copies had an evolutionary advantage once potatoes became a dietary staple in the Andes. The genetic shift began thousands of years before European contact. Researchers say the finding is among the strongest evidence yet that diet can directly shape human evolution.
