Chanterelle or toxic look-alike? How to tell them apart and cook them right

Chanterelle season is in full swing in Poland, but the prized mushroom is often confused with toxic look-alikes such as the false chanterelle. Real chanterelles have forked ridges (not gills), an egg-yolk yellow colour and a mild, fruity smell; the false chanterelle has true gills, a more orange hue and a bitter taste. Chanterelles are best sautéed in butter with garlic or used in sauces and scrambled eggs.
