How to Reduce a Sauce Until It Actually Thickens
Reducing a sauce means simmering it uncovered over medium-to-high heat to evaporate excess water and concentrate flavour. The longer it cooks, the thicker it becomes — stir regularly and watch the bottom to prevent scorching. The technique works equally well for meat-based, fruit and wine sauces.
