Expert Letter: Target Ultra-Processed Food, Not Fat, to Fight Obesity
Writing in response to a UK health select committee report on obesity, James Capon argues that Britain's "high in fat, salt or sugar" food-regulation framework is flawed because it lumps together nutrients with very different effects. He says the evidence points to sugar and refined carbohydrates — not fat — as the primary drivers of obesity and type 2 diabetes. Capon calls for policy to directly target ultra-processed foods instead of relying on the misleading three-nutrient label.
