Two water additives keep cabbage leaves from tearing when making gołąbki
Cabbage leaves frequently tear when making gołąbki (stuffed cabbage rolls), but the problem usually lies in how the cabbage is blanched, not the vegetable itself. Adding salt and vinegar (or lemon juice) to the boiling water keeps leaves pliable, improves flavour and makes rolling easier. With this technique, the filling stays in place during wrapping.
