No-Bake Stracciatella Cheesecake with Raspberries and Chocolate
This no-bake stracciatella cheesecake is built in a 24 cm springform pan on a sponge biscuit base. The filling combines whipped mascarpone, heavy cream and sugar, set with gelatine dissolved in warm milk and blended with yogurt. Finely chopped chocolate, whole raspberries and sliced strawberries are folded in before the cake is refrigerated to set.
