Heatwaves threaten parmesan cheese production in Italy
Extreme heat in Italy is reducing the quality and quantity of cows' milk, directly threatening production of Parmigiano Reggiano cheese. Producers in the Emilia-Romagna region are searching for solutions to adapt to the changing climate. Some fear they may be the last generation to produce parmesan in the traditional way.
