Don't cut potatoes before boiling — you lose key vitamins and minerals
A nutrition expert from Poland's National Centre for Nutrition Education warns that cutting potatoes before boiling them significantly reduces their nutritional value. Vitamins and minerals leach into the water through the larger cut surface area. Potatoes should be cooked whole, ideally in their skins, to retain the most nutrients.
