500-year-old freeze-dried Inca potatoes found in Peru storage room

Archaeologists found two lumps of chuño – freeze-dried potatoes – in an approximately 500-year-old Inca storage room on Peru's arid south coast, only the second such discovery ever made at an Inca site. Chuño was made by repeatedly exposing potatoes to nighttime frost and daytime sun, allowing storage for decades. The find is concrete evidence that the Inca Empire transported this vital food source hundreds of miles from the Andes to the Pacific coast.
